Apple Cake
This is delicious as a breakfast or dessert served warm with vanilla ice cream.
Cake:
4 large apples, peeled
1 cup sugar
1 cup flour
4 tablespoons softened butter
1 teaspoon cinnamon
1 large egg
Preheat oven to 350°
Prepare a medium size springform pan by buttering generously or using a non-stick spray. In a large bowl, mix sugar, flour, butter, cinnamon and egg well. Press dough into bottom of pan, then lay the apples on top.
Bake 45 minutes, then add topping below:
Topping:
3 tablespoons brown sugar
3 tablespoons melted butter
1 teaspoon cinnamon
1 large egg
Mix all ingredients and pour over cake after baking 45 minutes. Bake an additional 25 minutes at 350°
Remove from oven and cool completely before removing from pan.
